Inelastic neutron scattering studies of water on bio-polymers

    Abstract

    Incoherent inelastic neutron scattering spectra of gelatin and chitosan, dry and with different water contents, were recorded in the region 0-250 meV. Comparison with the spectrum of ice Ih shows that the two triangular peaks at 29 and 38 meV become clearly visible only for water contents above 100%. This result implies that for samples with up to 100% water the structure of water clusters around the bio-polymer molecules is very different from that of normal ice Ih.
