Abstract
We describe the first example of a tri-phasic oil-in-water-in-air 'dry water emulsion'. The method combines highly stable oil-in-water emulsions prepared using branched copolymer surfactants, with aqueous droplet encapsulation using 'dry water' technology. © 2011 The Royal Society of Chemistry.
